Soy sauce koji is a seasoning made by fermenting soy sauce and rice koji.

Soy sauce koji also preserves the original taste and aroma of soy sauce. However, the salty taste is mellowed and the flavour is more intense and also sweeter. Furthermore, a koji-derived aroma is added, giving it a complex, mellow taste.


Midegain's soy sauce koji has garlic added to it, which gives it an even richer, more appetising taste.
Soy sauce koji and garlic both contain the highest level of the umami ingredient glutamic acid. Due to their extremely rich umami content, just a small amount can significantly increase the flavour of a dish and add depth to the taste. It is a perfect all-purpose seasoning that can be poured over, mixed, marinated, dressed or dipped in. I recommend the recipe for chicken marinated overnight in soy sauce koji and honey and grilled.
