Nanban koji, also known as koji nanban or issyouzuke, is a traditional seasoning from the Tohoku region of Japan.
I started making it when I visited a sake brewery during the winter sake-making season and heard that it was super tasty to make nanban koji and eat it over rice. And it was really good!
The ingredients for nanban koji, which has been made since ancient times, are soy sauce, koji and chilli, but Midegain's nanban koji has garlic added to it, making it even more appetising. The ingredients are very simple, but the koji gives it a sweet and savoury taste, and the stimulating taste of the chilli pepper combines to make it a versatile seasoning that matches a wide range of dishes.
It is a product with a high repeat rate among spicy food lovers, who seem to love the taste so much and we realised that there are so many people in the Netherlands who are looking for something stimulating as well! However, please note that our Nanban Koji is designed to be extremely spicy.
Just pour it over rice, tofu, vegetables, natto, meat or fish, mix it with mayonnaise on sandwiches as a sauce, use it in stir-fries, or add it as an accent to soups - anything tastes good depending on your ideas.
